Scarrafun Print E-mail

A very special recipe of Massa. The so called "scarrafun" (it means "black-beetle") takes its name from its strange shape. Here you can find the ingredients, but you have to be born in Massa to be able to cook them. Some ancient special wooden tools are needed too: the "fuso" ("spindle") and the "pettine" ("comb"), typical tools used for spinning wool and other textiles.

Ingredients:

  • 3 kg of flour
  • 20 eggs
  • 4 glasses of extra-vergin olive oil
  • 2 glasses of white wine
  • 3 fistfuls of salt
